Baked-Lemon Chicken

>4 boneless-skinless chicken breasts which are pounded to even-thickness and then brined in saltwater
>3 tablespoons of melted butter
>4 cloves of peeled & minced garlic
>2 tablespoons of freshly-squeezed lemon-juice
>1 teaspoon of Kosher salt
>1 teaspoon of fresh thyme-leaves
>1/2 teaspoon of freshly-cracked black-pepper
You may also include extra-fresh thyme-sprigs and fresh lemon slices though these are optional.
Directions
The first step is filling a bowl with 1 quart of warm water and 1/4 cup of kosher-salt, then stirring so that much of the salt gets absorbed. You then add your chicken breasts and allow them to sit in this mixture for about 15 minutes.
Next, you remove your chicken breasts out of the brine and then rinse them using cold water before patting them dry by use of paper towels.

Set it aside and then pour your melted butter mixture into another baking dish. Place your chicken breasts on top of this dish in an even layer and using a pastry brush, brush the butter-mixture all over your chicken breasts till completed coated. Sprinkle each chicken breast with pepper and pinch of salt or even lemon slices.
Bake for about 5 minutes before removing the pan from your oven and brushing the chicken with your butter mixture once more. Again, bake for about 5 minutes then remove the brush before baking for up to 8 minutes or till your chicken is ready.
